Pumpkin Spice Martini

Vodka martini full of pumpkin, pumpkin spice and coffee flavor with a sugar-spice rim.

Ingredients

For the Cocktail

1 c ice cubes

1 1/2 oz vodka

1 oz Kahlúa

1 oz vanilla nondairy milk

1/2 oz simple syrup or 100% pure maple syrup

1/4 tsp vanilla extract

1/4 tsp pumpkin pie spice

For the Simple Syrup

1/2 c water

1/2 c sugar

For the Rim

1/4 c sugar

2 tsp pumpkin pie spice

1 tbsp maple syrup

optional nondairy whipped cream to top

Instructions

  1. Make Simple Syrup: If you don’t have any simple syrup on hand, it’s time to make it! Add sugar and water to a small saucepan and heat on the stove over medium. Stir until sugar is completely dissolved. Remove from heat. Allow syrup to cool slightly before transferring to a sealable jar. Place jar in the fridge to chill for at least 30 minutes. Skip step if using maple syrup.
  2. Rim the Glasses: Mix sugar and and pumpkin pie spice together on a plate. Using your finger or a small brush, coat the rim of a martini glass with maple syrup. Spin the coated rim of the glass gently in the sugar and spice mixture. Continue until you have coated as many glasses as you intend to make drinks.
  3. Make the Drinks: Fill a cocktail shaker with ice. Add vodka, Kahlúa, nondairy milk, simple syrup, vanilla and pumpkin pie spice to the shaker. Cover and shake aggressively for about 30 seconds. Pour contents through the strainer top of the cocktail shaker into prepared martini glass. Top with a dollop of nondairy whipped cream and a sprinkle of pumpkin pie spice if desired.

Notes

*If you’d like to get ahead, I would recommend making the simple syrup in advance. It will keep in the fridge for up to one month!

*These cocktails should be made and served immediately. Do not make a large batch with the intention to serve later. The mixture will begin to separate after only about 10 minutes.
