Inspired by the song "Question...?" on Taylor Swift's album "Midnights," this watermelon-strawberry-lime mocktail will have you questioning (haha) how you ever spent a summer without it.

Ingredients

Scale

For the Mocktail

2 c watermelon cubes

1 c strawberries, chopped

juice of 1 lime

1/4 c simple syrup*

lime sparkling water to top

For the Simple Syrup

1/4 c sugar

1/4 c water

Instructions

  1. Make Simple Syrup: Start by making the simple syrup. Add sugar and water to a small saucepan and heat over low for 2-3 minutes stirring occasionally. Remove from heat once sugar is completely dissolved. Set aside to cool for at least 10 minutes.
  2. Blend: To a high speed blender, add watermelon cubes, strawberries, lime juice and simple syrup. Blend on high for about 1 minute or until smooth. Run the mixture through a fine mesh sieve into a large measuring cup or a small pitcher. You want something with a spout. Use your hands to get as much liquid through the mesh as you can.
  3. Assemble and Serve: Distribute the mixture evenly between 3 cocktail glasses. Top with lime sparkling water. Use as much or as little as you like. The more soda water you add the less sweet the mocktail. Garnish with lime slices if desired. Serve immediately.

Notes

*The base for this mocktail can be made in advance. Blend the watermelon, strawberries, lime juice and simple syrup together and run through a sieve. Refrigerate until you are ready to serve. Add soda water at that time.

**Roll your limes on the countertop before squeezing. This will ensure you get the most amount of juice.

***It’s sometimes nice to make a large batch of simple syrup to keep on hand for cocktails and mocktails. The ratio of sugar to water is always 1:1 so you can scale the recipe as you’d like. You can store prepared simple syrup in a tightly sealed jar in the fridge for up to 1 month.
