Mocktail inspired by Taylor Swift's "Sweet Nothing." Based on the Paloma, this drink is light, refreshing and full of grapefruit-lime flavor.

Ingredients

For the Mocktail

juice of half a lime

1/2 oz simple syrup*

1/2 c grapefruit juice

sparkling water to top

ice

For the Simple Syrup

1/2 c sugar

1/2 c water

Instructions

  1. Simple Syrup: Begin by making the simple syrup. Combine sugar and water in a small saucepan on the stove and heat over medium until the sugar is completely dissolved and the water looks clear. Remove from heat. Let syrup cool in the pan for 15 minutes before transferring to a sealable container like a jar. Chill in the fridge for at least an hour before using. It's a good idea to do this in advance to save time.
  2. Prepare the Mocktail: To make the mocktail, fill a cocktail glass to the top with ice. Squeeze in the juice of half a lime and pour in the simple syrup. Add in the grapefruit juice and top glass with sparkling water. Serve immediately.

*Simple syrup is super easy to make! If you have any leftover after making your mocktails save it in a glass jar or another airtight container in the fridge. It will last for up to 1 month. It's a great idea to make this syrup in advance.

*I always think it's super fun to rim the glass in sugar and it looks really cute! Sprinkle about 2 tbsp of sugar onto a plate. Rub a lime around the rim of your glass and then turn it over into the sugar to coat.
