Vegan Belgian Waffles

Soft, fluffy Vegan Belgian Waffles made completely without dairy and eggs.

Ingredients

For the Waffles

2 cups all purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup nondairy yogurt*

1 cup nondairy milk

1/4 cup vegan butter, melted

1 teaspoon vanilla extract

To Serve (Optional)

vegan butter

pure maple syrup

fresh fruit

powdered sugar

Instructions

  1. Mix: In a large bowl whisk together the all purpose flour, sugar, baking powder, baking soda and salt. Add nondairy yogurt, nondairy milk, melted vegan butter and vanilla extract to the bowl. Whisk until just combined. Do not over-mix. It's ok if there are still some lumps in the batter!
  2. Heat: Plug in your waffle iron and begin to preheat. It is best to do this after making your batter so it gets that time to rest. It should rest about 10 minutes prior to use to allow the gluten some time to activate.
  3. Cook: Cook waffles in waffle maker according to manufacturer instructions. Continue process until all batter is used up. Serve immediately with maple syrup, vegan butter and/or fruit.

Notes

*Prepared waffles can be individually wrapped and frozen. They will keep this way for up to 1 month.

*Use unflavored and unsweetened nondairy yogurt if possible.
