This delightful recipe takes the classic marshmallowy favorite and gives it a plant-based twist, resulting in a gooey, chewy, and utterly delicious dessert. The combination of rich vegan chocolate and creamy peanut butter adds layers of flavor, while the crispy rice cereal provides that satisfying crunch.

1/3 c vegan butter

10 oz bag mini marshmallows

1/4 tsp salt

1 tsp vanilla extract

6 c krispie rice cereal

1 c nondairy chocolate chips

1/3 c peanut butter

Instructions

  1. Melt the Marshmallows: Line a 9 inch square pan with parchment paper. Set aside. Add vegan butter to a large pot and melt over medium-low heat. Add in the marshmallows and stir continuously until completely melted. Remove pot from heat and stir in the salt and vanilla extract.
  2. Prepare the Filling: Add the krispie rice cereal and stir into the mix using a wooden spoon. You’ll need to work quickly as the melted marshmallow mixture will begin to firm up as it cools. Once the cereal is well-incorporated, stir in the chocolate chips. They will melt as you stir. Plop in spoonfuls of the peanut butter and give the mix only one or two big stirs. This will leave you with some nice peanut butter swirls.
  3. Press and Cool: Press the prepared chocolate peanut butter rice krispie mix into your prepared pan. Lightly grease a small square of wax or parchment paper and use it to do the pressing. This will keep you keep your hands clean. Allow rice krispies to cool in the pan for 1 hour before cutting in.

*Prepared rice krispie treats will keep at room temperature for 2-3 days.

*There are two ways to press your rice krispie mixture into the pan. If you press in firmly you will get denser treats. If you simply spread out the mix in the pan or only press lightly you will get airy treats. Both are delicious.
