Vegan Oreo Brownies

Fudgy vegan brownies filled and topped with Oreo cookie pieces.

Ingredients

15 oz can black beans*

1/4 c water

1 tsp instant espresso powder

1/2 c vegan butter

4 oz dark chocolate (50-70%)

1 c sugar

1 c light brown sugar

2 tsp vanilla extract

3/4 tsp salt

1 c cocoa powder*

1 c all purpose flour

16 Oreos (or other vegan chocolate sandwich cookies)*

Instructions

  1. Prep: Preheat oven to 350 degrees F (175 C) and line a 9 x 9 inch square baking pan with parchment paper. Set aside.
  2. Blend: Drain and rinse the black beans and place into a high speed blender or food processor along with the water and espresso powder. Blend until completely smooth. You can add a little more water to get things moving if needed.
  3. Make the Batter: Add vegan butter and dark chocolate to a large, microwave safe bowl. Heat in the microwave in 30 second increments until completely melted, stirring after each. Add the sugar, brown sugar, vanilla and salt to the bowl and whisk vigorously for 1 full minute. Mixture will be very thick. Pour in the blended black bean mixture and whisk for another minute. Sift in the cocoa powder and all purpose flour and mix until just combined.
  4. Add Oreos: Chop, crumble or mash your Oreos until they are broken into chunks. Fold 3/4 of the cookies into the prepared brownie batter, reserving 1/4 to top the brownies.
  5. Bake: Spread the brownie batter into the prepared baking pan evenly using a rubber spatula. Sprinkle the reserved cookies over the top of the batter. Press the cookies in lightly using your hands. Place brownies on center rack of preheated oven and bake for 45 minutes. Allow brownies to cool in the pan for at least 1 hour before slicing.

*Brownies will keep in an airtight container at room temperature for 2-3 days or can be frozen for up to 1 month.

*I know black beans in brownies sounds crazy but I promise you won’t even notice them! Be sure to purchase a can of black beans that has absolutely no seasoning aside from salt!

*High quality cocoa powder is really important when making brownies. Use dutch processed cocoa if you can but a trusted brand of regular cocoa powder will also work.

*While it may surprise a lot of people, Oreo cookies are accidentally vegan! You can choose to use them for this recipe or you can use another brand of vegan chocolate sandwich cookies.
