Vegan Peppermint Hot Chocolate

Rich, minty vegan hot chocolate! Made completely in a saucepan on the stove and topped with mini marshmallows, whipped cream and crushed peppermint!

Ingredients

For the Hot Chocolate

2 1/2 c nondairy milk

1/2 c nondairy chocolate chips

1 tbsp sugar

1 tsp peppermint extract

For Serving (all optional)

nondairy whipped cream

mini vegan marshmallows

crushed peppermint

Instructions

  1. Melt Chocolate: Combine nondairy milk, chocolate chips and sugar in a small saucepan. Heat on stove over medium-low whisking frequently. Continue to heat and whisk until the chocolate is completely melted. Remove from heat and whisk in the peppermint extract.
  2. Serve: Allow hot chocolate to cool slightly in the pan. Test it with a spoon to see that it has reached a desirable temperature. Divide the hot chocolate between two mugs and top with nondairy whipped cream, mini vegan marshmallows and crushed peppermint is desired. Serve.

Notes

*Serve hot chocolate immediately after preparation.

*When melting the chocolate, do not keep the stove burner on for any longer than necessary. Remove pan from heat the moment all of the chocolate is melted or you will end up having to wait a long time for the hot chocolate to cool!
