Vegan Rice Krispie Treats

Everything you love about traditional Rice Krispie Treats in a nice vegan package. Buttery, vanilla-y and filled with delicious marshmallow flavor.

Ingredients

1/3 c vegan butter

10oz bag mini vegan marshmallows

1/2 tsp sea salt

1 tsp vanilla extract

6 c crispy rice cereal

Instructions

  1. Prep: Line a 9x9 inch pan with parchment paper and lightly grease with cooking spray. Set aside.
  2. Make the Rice Krispie Filling: Melt butter in a large pot on the stove over medium heat. Add marshmallows to the pot and melt, stirring constantly. Remove from heat immediately after all marshmallows are melted. Stir in sea salt and vanilla. Add crispy rice cereal to pot and stir until well-combined.
  3. Set: Dump mixture into prepared pan and press down evenly. Set Rice Krispie Treats in an area of your kitchen that won’t be disturbed. Let them sit and cool in the pan for at least an hour before cutting.

*Prepared rice krispie treats will keep in an airtight container at room temperature for 2-3 days. Do not freeze.

**Working quickly is important when making rice krispie treats so be sure to prepare all of your ingredients before starting.

*** To avoid having the rice krispies stick to your hand, lightly grease a small square of parchment paper and use it to press down on the top of your treats. It won’t stick and your hands will stay clean. It will also help you get a very even layer.
