How to Make Vegan Christmas 7 Layer Bars

Begin by whisking together the flour, sugar and baking soda in a large mixing bowl. Stir in the softened vegan butter, water and vanilla using a rubber spatula.


Press the cookie dough into an 8 inch square pan that has been lined with parchment paper.
Bake in an oven that has been preheated to 350 degrees F (175 C) for 15 minutes.
While the cookie base bakes, whisk together the coconut milk, cornstarch, vanilla and salt until smooth.

Remove the pan from the oven and sprinkle the chocolate chips and shredded coconut over the cookie base.
Pour the coconut milk mixture over the top of everything evenly. Sprinkle on the festive sprinkles and pretzels. Press down lightly.
Bake for an additional 27-30 minutes. Wait until completely cool before cutting.

Ingredients

You can bring it together using your hands to hurry the process along. Press sugar cookie dough evenly into prepared pan and bake in preheated oven for 15 minutes.
- Mix: While sugar cookie base is baking, whisk together coconut milk, agave nectar, remaining ½ teaspoon vanilla extract, salt and cornstarch until completely smooth. Set aside.
- Assemble: When 15 minutes is up, remove pan from the oven. Sprinkle chocolate chips and coconut flakes over the sugar cookie base. Pour coconut milk mixture evenly over the top of everything. Top with pretzels and sprinkles. Press down lightly to pack everything together.
- Bake: Return pan to oven and bake for an additional 27-30 minutes. Allow bars to cool completely before cutting into them.
