This ice cream may just be my new favorite thing about fall!

It's base is made up of both nondairy heavy cream and cream cheese, giving it an incredibly smooth base and a beautifully tangy flavor. I don't think a better combo exists than pumpkin and cream cheese!

Begin by tossing the cookies into a food processor. Run the machine until the cookies are mostly crushed. Transfer to a bowl and toss with the melted vegan butter and nondairy milk. Set aside.

Place the pumpkin puree on an absorbent paper towel. Pat gently until towel is completely saturated. Transfer pumpkin to another towel and repeat the process. You want to remove some but not all of the water. Do not squeeze or ring.

Place pumpkin in a large mixing bowl and whisk together with the nondairy sweetened condensed milk, spices, salt and vanilla. Set aside.

Pour the remaining ice cream base over the top and spread out with a rubber spatula. Drop spoonfuls of the remaining cookie mixture over the top. Swirl again with a knife.
