After developing my vegan pumpkin sugar cookies, I knew I wanted to make another cookie that resembled more of a Crumbl Cookie. I was looking for a thicker, sturdier pumpkin cookie with a gorgeous swirl of cream cheese frosting. This is that cookie!

Begin by creaming together your vegan butter and sugar in a large mixing bowl with an electric hand mixer. Add the baking soda, salt, spices, vanilla and dried pumpkin to the bowl and beat again to disperse. Add flour to the bowl and mix until just combined. Cover bowl and chill for at least 1 hour.


Place 3 tablespoon scoops of cookie dough on a baking sheet lined with parchment paper about 2 inches apart.
Bake cookies on center rack of an oven that has been preheated to 350 degrees F (175 C) for 16-18 minutes. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool comlpetely.
Prepare the frosting while the cookies bake and cool! Beat the softened cream cheese with an electric mixer until completely smooth. Add the shortening and vegan butter the the bowl and beat again to combine.

For vegan cream cheese frosting, I'd recommend sticking with plain, full-fat vegan cream cheese rather than whipped varieties. The texture of the cream cheese can make a big difference in how thick and stable the frosting turns out.
- Tofutti Better Than Cream Cheese: A particularly good choice when you want a thicker, more stable frosting. It's soy-based!
- Kite Hill Plain Cream Cheese: A great option if you want a tangier, cream-cheese-forward flavor. It's almond-based and works well in frosting, although it can be somewhat softer than Tofutti.
- Violife Just Like Cream Cheese Original: A good nut-free option with a mild flavor and creamy texture. The flavor isn't overly strong.

- 1 cup vegan butter, softened slightly
- ¾ cup light brown sugar
- ¾ cup granulated sugar

Instructions
- Cream: Cream together the vegan butter, granulated sugar and light brown sugar in a large bowl until light and fluffy. This should take about 1 minute. Add the baking soda, salt and spices to the bowl and beat again to distribute evenly.
- Dry: Scoop the pumpkin puree onto an absorbent paper towel and press lightly until the towel is completely saturated. Transfer to a second paper towel and repeat the process. Your goal here is to remove some of the excess water - not all of it! Don't squeeze or wring. Saturating two half-sheets is enough. Add the dried pumpkin to the bowl and mix until combined.
- Mix: Add the all purpose flour to the bowl and mix until cookie dough just comes together. Do not over-mix!
- Chill: Cover the bowl and place in the refrigerator to chill for at least 1 hour or overnight.
