Taylor Swift "Midnight Rain" Mocktail

Track 6 anyone? The Midnight Rain Mocktail has officially arrived! This particular mocktail was inspired by rain...acid rain more specifically. While it doesn't produce actual pain like the song insinuates, it might make you pucker a little. Green-apple lime flavor is sweetened to perfection and topped with soda water to round it out. This one is especially easy so if you're looking for something quick, Midnight Rain is your girl!

Midnight Rain Mocktail Ingredients

  • Green Apple: 1 Granny Smith apple is all you need here. Do not peel the apple as the skin holds all of the awesome flavor. Even though you will be blending the whole thing be sure to cut it into chunks to make things a little easier for your machine.
  • Lime: You will be throwing the entire lime into the blender. Yep. You heard that right. The whole thing. I know that sounds a little wild but you will be removing all pulp following the blending process so you want as much lime flavor as possible!
  • Agave Nectar: Agave nectar is a liquid sweetener (like maple syrup) that you can typically find in the baking aisle of your grocery store. This will balance out your drink so it isn't too sour. If you are having trouble finding it, you can sub simple syrup.
  • Sparkling Water: Sparkling water is unsweetened and adds a nice amount of carbonation to any mocktail. You can use an unflavored variety or you can sub a lemon or lime flavor.

Steps for Making Midnight Rain Mocktails

  1. Blend: Add green apple, lime (rind and all), agave nectar and water to a high speed blender. Blend on high for 1 minute. Run the mixture through a fine mesh sieve into a pitcher and discard the pulp.
  2. Garnish and Serve: Fill 4 cocktail glasses filled with ice about ¾ of the way full with green apple-lime juice. Top each glass with soda water. Garnish with lime slices. Serve immediately.

Tips for Making Midnight Rain Mocktails

  1. If you would like to get ahead, you can make the green apple-lime mixture for this mocktail in advance! Blend the green apple, lime, agave and water and run the mixture through a fine mesh sieve into a pitcher. Refrigerate the pitcher until you are ready to serve the drinks. Pour into cocktail glasses filled with ice and top with sparkling water.
  2. Fun ice cubes make a huge difference. I recently bought an ice tray that makes tiny, spherical ice cubes. They looked so cute in the drink and everyone complimented them. I'll just leave this here...;)
  3. Whatever you do, do NOT blend the sparkling water with the rest of your ingredients in the blender. The air created by the spinning blade doesn't mix well with carbonation. You will either make the entire mocktail super frothy OR when you open the top of your blender it will go everywhere. Don't say I didn't warn you!

1 green apple, cut into 1 inch chunks

1 lime, quartered

3 tbsp agave nectar

2 c water

sparkling water to top

  1. Blend: Add green apple, lime (rind and all), agave nectar and water to a high speed blender. Blend on high for 1 minute. Run the mixture through a fine mesh sieve into a pitcher and discard the pulp.
  2. Garnish and Serve: Fill 4 cocktail glasses filled with ice about ¾ of the way full with green apple-lime juice. Top each glass with soda water. Garnish with lime slices. Serve immediately.

Notes

*If you would like to get ahead, you can blend the green apple-lime mixture, run it through a sieve into a pitcher and then refrigerate until ready to serve. It will keep in the fridge for 3-4 days.
